Jamie Eason’s Turkey muffins — (original recipe)
2 lbs ground turkey
3 egg whites http://www.eggwhitesint.com/likes/DaniGetUrGunz
1 cup of quick cooking oats
2 celery stalks, finely chopped (approx 1 cup)
1 small onion, finely chopped (approx 1 cup)
1/2 tsp ground cumin
1/2 tsp dried thyme
2 tsp dry yellow mustard
2 tsp black pepper
2 tsp chipotle pepper spice (I used Mrs. Dash Southwest Chipotle Blend)
2 tbsp garlic powder (or 2 cloves, minced)
I felt this recipe was a little bland so I add more seasoning than she does. Just play around with it until you love the taste!! Try not to add too many other spices that aren’t “clean” though
- Preheat oven to 375 degrees.
- Line baking sheet with foil (Jamie uses muffin tins but they get very messy-I actually use my silpat silicon thingy or the foil.)
- Mix all the ingredients together in a large bowl. Roll the mixture into balls & place on your baking sheet or in your muffin tin.
- Bake for 40 minutes
You can make them however big you want to but I make my meatballs into about 1 1/2 inches wide. This recipe makes 25 of the meatballs.
