This is one of my random “lunch in a hurry” concoctions that turned out really yummy!! The key to Clean eating is having food that is prepped ahead of time! I always grill a ton of fish at one time, cook some quinoa and have a big batch in the fridge. When it’s time to eat, I will sometimes mix things to change it up. This is as easy as it gets!
- Grilled tilapia
- 1 TBSP of hummus
- Salsa (prob only a TBSP)
- Mrs. Dash (I used Fiesta Lime)
Mix first 4 ingredients together and just sprinkle Mrs. Dash on it and enjoy!!
I usually have sliced colored bell peppers ready to go in fridge too and I might just put some of those on the side of the plate and get after it! 🙂 Easy peasy 🙂
